Despite the name “bolo” (cake), their texture and versatility make them closer to a soft, sweet bread with a unique personality. Born in the picturesque Furnas Valley, in São Miguel, these small, golden disks are the result of artisanal baking that spans generations.

Bolos Lêvedos have a simple appearance: they are round, slightly flattened disks with a golden, gently toasted crust that contrasts with an incredibly airy and soft interior. Their ingredients are the basis of traditional Azorean cuisine: flour, milk, eggs, butter, and sugar. The magic lies in the patience required for the leavening process — which gives them the name lêvedos — and the cooking method, which guarantees their unmistakable texture.

Recipe

Ingredients:
500g Type 65 flour without yeast;
125 g Sugar
125 g Butter
15 g Fresh baker’s yeast
200 ml warm whole milk
2 Eggs
1 teaspoon of salt

Preparation
Step 1 Place the yeast in a large bowl and add the warm milk.

Step 2 Mix the ingredients together briefly to dissolve the yeast. Let it sit for 5 minutes.

Step 3 In a large bowl, place 500g of flour. Make a well in the center and pour in the eggs, sugar, and butter.

Step 4 Add the milk and yeast mixture, mix everything until a dough forms.

Step 5 Add the salt and mix everything well with your hands.

Step 6 Remove the dough from the bowl and knead it. Once finished, form it into a ball, place it in a bowl, and sprinkle with half a tablespoon of flour. Let it rise until doubled in size.

Step 7 Then form small balls and place them on a baking sheet. Place a tea towel sprinkled with the remaining flour on top. Let rise for another 1 to 2 hours, until doubled in size.

Step 8 Heat a skillet greased with olive oil. Flatten the balls and cook them in the skillet for about 3 minutes on each side.

Visit the Furnas Valley and look for the traditional bakeries and pastry shops. The smell of sweet bread and rising dough will guide you there! It is also common to find them fresh and packaged in pastry shops and supermarkets across the island, and even on the mainland.
